While I am not in favor in the beginning stages of this diet to have coconut in any other form than the oil I do understand the problem with ingesting large quantities of the oil without something to make it easier to go down.
With that I am posting my coconut nut milk recipe.

3 cups of shredded organic coconut.
4 cups of filtered water.
Combine in a smallish pot and bring to a simmer. Simmer on very low for 10 minutes.
Let cool.
Using a stick blender, blend the mix for about 4 minutes.
Put the mix into a piece of calico or muslin cloth and squeeze the milk out into a bowl.
Just like milking a cow. Put into a jug and store in the refrigerator.

Mix a little of this milk with coconut oil and a few berries and blend with stick blender. Makes taking larger quantities of coconut oil much easier!
