Stevia Sweetened Almond Meal Chocolate Cake


This is a cake for only very, very special occasions and only when you are well on the road to recovery.

So saying we all need something to make for those times when we are asked to bring something to a gathering and we don’t want to bring what we now know, is not only poisonous to our bodies, but pretty well much everyone else.Smile

  • 100g extra virgin coconut oil
  • 150g 85% or 90% dark chocolate
  • 4 large eggs at room temperature
  • 1 teaspoon of stevia powder
  • ½ teaspoon vanilla essence
  • 200g almond meal (ground almonds)

How to Make

  1.  Grease a 20 cm diameter cake tin and line with baking paper
  2. Pre-heat oven to 180 C, it is a delicate cake so don’t use fan forced
  3. Place coconut oil with the chocolate in a saucepan and warm gently till liquid and then leave to cool to room temperature.
  4. Separate the egg yolks from the whites taking care not to get any yolk in the whites as this will prevent the whites from whipping properly
  5. Beat yolks with half of the stevia power until thick and creamy.
  6. Add cooled  chocolate/coconut oil mixture and 1 teaspoon of vanilla essence
  7. Gently fold in ground almond meal
  8. Whip egg whites with the rest of the Stevia power until soft peaks form.
  9. Gently combine yolk/almond mixture with about 1/3 of the whipped egg whites
  10. Fold in the rest of the whipped egg whites until only just combined so that you do not lose the air that you have whipped in.
  11. Bake at 180 C for 40 minutes.  Remove from the oven and allow to cool in the pan, covered with a clean tea towel.
